For Mothers Day (almost a month ago) I decided to make my Mom's favourite dessert - date squares! I wanted to try to adapt this recipe to make it a healthier option! It turned out fantastic! I must give it to The Gluten Free Vegan (if you haven't been on her website check it out cause it is awesome!) I used some of her advice and they turned out perfectly!
Here is what you will need:
- 1 1/2 cups of gluten free oats
- 1 1/2 cups of gluten free flour
- 2/3 cup of brown sugar
- 1 cup of margarine
- 1 tsp of baking soda
- 1 1/2 cup of chopped dates
- 1/3 cup of sugar
- 2/3 cup of water
- 8x8 baking dish
- sauce pan
Instructions:
1. Preheat oven to 350C
2. Grease a 8x8 baking dish well
3. Mix together oats, flour, brown sugar, margarine, baking soda to make crumbing base
4. Place half of this mixture at the bottom of greased baking dish

6. Add in chopped dates, sugar and water
7. Bring to a boil, until liquid is almost completely evaporated and there is a nice thick paste left

8. Remove paste from heat and add paste to first layer of oats
9. Lastly, to finish off - add the oats mixture to the top of the date paste
10. Place in the oven for 30 minutes, wait until cool & it is ready to serve!

and VOILA! A delicious, healthy, gluten free date square recipe that tastes just like one of Grandma's Classics!
