I decided to put this post on "The Good" section because while it is a great healthy option it doesn't follow my normal no/low carb and paleo friendly model for "The Healthy". I have also been neglecting this section of my blog so I thought it was time to get at 'er! This is one of my all time favourite lunch recipes one of these pizza's is filling and holds me over for the rest of the afternoon! Take a look!
Here is what you will need:
- 1 whole wheat tortilla
- 3 tbsp tomato sauce or pizza sauce
- 1/4 zucchini sliced
- 1/2 cup of chopped spinach
- 1/2 tomato diced
- 1/2 red pepper diced
- 2 rings of onions (if that makes sense, peel those babies back and use 2)
- Lastly, cheese of your choice I always go for 1/4 cup of shredded cheddar
Instructions:
1. Preheat oven to 400C
2. Lay tortilla flat and spread tomato sauce evenly with a spoon
3. Next, layer the tortilla with chopped spinach (this way it doesn't burn under the heat and is at the heart of the pizza!)
4. Add your onions, zucchini & red peppers to the pizza
5. Add the tomatoes last as they are watery

7. Pop in the oven for 5-7 minutes - making sure to watch the pizza carefully so it does not burn

A delicious GOOD FOR YOU pizza that is not greasy, vegetarian and delicious! (Ps. totally added pepperoni's to this before I popped in the oven… GUILTY!)
