This is one of my all time favourite recipes for breakfast! As a teacher I am always on the go from the time I get in my car until I am home at night. This is a great breakfast that keeps me full until recess which is normally around 10:30-11:00am.
Here is what you will need:
Ingredients:
1/2 scoop of whey protein (I used chocolate peanut butter for this recipe)
1 egg
1 tbsp flour
1 tsp coconut (shredded is the best kind) it adds a bit of flavour
3 tbsp yogurt (I used strawberry this week but normally I like to use plain yogurt)
- 1 frying pan
- cooking spray
Instructions
1. Preheat frying pan to medium heat.
2. Combine all ingredients into a bowl. Starting with protein powder, flour and coconut and slowly add in the wet ingredients: egg and yogurt.
3. Whisk until the mixture is smooth.
4. Pour mixture into frying pan in a circular shape.
5. Leave on side for 4-5 minutes.
6. Flip the pancake and fry for another 4-5 minutes.
7. Lastly, top with your favourite toppings - I love my peanut butter and enjoy!
The protein pancake is also great to top with fresh fruits such as strawberries!!
