Within the last few days, I have been lacking on grocery shopping so I have had to become creative with what I have in my fridge. I find this is normally the time I come up with some of my greatest recipes as I am really pushed to try new things. This week I came up with this Cajan inspired chicken recipe for lunch. It was the perfect combination of spicy & refreshing. A great spring time lunch!
