These healthy treats are the only thing that get me through the day teaching! They provide me with that chocolate taste that I am craving mid-day without the added calories and it has protein which keeps me full until the end of the day! They are perfect. I always make extras and freeze them so they are good to go a week where I am very busy.
-Here is what you will need:
Makes approximately 12 cookies
Prep time: 10 minutes
Cook time: 15 minutes
Ingredients:
- 1/2 cup flour (you can substitute regular flour for coconut flour)
- 1/2 cup of chocolate whey protein
- 1/4 cup shredded coconut
- 1 cup all natural peanut butter
- 1 large egg
- 1 tsp baking soda
- 3 tbsp dark chocolate chips
- 1 large mixing bowl
- 1 baking sheet
- 1 spoon
Instructions:
1. Preheat oven to 350C.
2. Start by measuring all dry ingredients: flour, chocolate whey protein, shredded coconut and baking soda. Mix all the dry ingredients in bowl first.
3.. Add in the 1 large egg and mix well.
4. Lastly, add in the all natural peanut butter. I find that all natural peanut butters tend to have more oils and therefore mix in better. If your having difficulty heat up your glass measuring cup in the microwave with the peanut butter for 10 seconds.
5. Sometimes I find the mix to be a bit dry so I add in milk or water. Add in 1 tbsp at a time until you get the consistency of regular cookie dough.
6. Take your spoon and start to roll your cookie dough into balls and placing them on a greased baking sheet.
7. Place cookies in the oven for 15 minutes at 350C.
8. After 15 minutes, take cookies out, let them cool & enjoy!
