This is one of those simple and tasty lunches I threw together in a quick 10 minutes.
What you will need:
- 1 cup couscous (I get my couscous from Bulk Barn)
- 1 cup water
- 1 cup chickpeas
- Lemon and herb spice
- A protein/meat of your choice - I used a left over sausage
Steps:
1. Bring 1 cup of water to a boil
2. Remove pan from heat and add couscous
3. Cover and let it sit for 10 minutes
4. Add herb of your choice - I went with a lemon and herb spice
5. Add drained chickpeas
6. Add protein of your choice
And Voila!! Healthy, simple and tasty lunch!
