Today I was inspired by making a gingerbread house with my students that I decided it was a good day to make chewy gingersnap cookies!
Here is what you will need:
- 2 cups of softened butter (or margarine)
- 2 cups of sugar
- 1/2 cup of maple syrup
- 1/2 cup of brown sugar
- 2 eggs
- 3 1/2 cups of flour
- 2 teaspoons of baking soda
- 2 teaspoons of cinnamon
- 2 teaspoons of ginger
Here is what you will need:

Instructions:
1. Preheat oven to 375C
2. Add ALL ingredients to large bowl
3. Mix with electric mixer (if you find the mixture too thick add 1 tbsp of milk at a time until consistency is less thick)

4. Roll dough into balls and place on baking pan lined with parchment paper
5. Sprinkle additional sugar on top of each ball

6. Place in over for 10-12 minutes (until crispy brown on top)
AND VOILA! Easy as 1, 2, 3!
