Sorry for the late post guys - TIS THE SEASON of being too busy always! Tonight I made a fresh tasting Balsamic Stuffed Pork Tenderloin that came out seasoned to perfection and was fabulously fresh! Great for entertaining a small dinner party!
Here is what you will need:
- 1 large pork tenderloin (mine was 0.55kg)
- 1 1/2 red apples (you may use green if you like as well)
- 1/2 cup bread crumbs
- 1 cup chopped spinach
- 1/2 cup balsamic
- A dash of brown sugar

Instructions (this is seriously toooooo easy)
1. Preheat oven to 375C
2. Dice apples to small size and place in large mixing bowl (if you do not like the skin of apples, I suggest peeling it before dicing)

3. Add chopped spinach
4. Add bread crumbs, balsamic vinegar and a dash of brown sugar and mix well
5. Cut the pork tenderloin length wise and start stuffing (I did not have string so I had to use skewers .. improvisation!) If you have string you can make the stuffing into a nice circular shape within the tenderloin
6. Place tenderloin in a nicely greased dish and cover with rest of seasoning and balsamic vinegar (don't get too carried away on the vinegar)
7. Place in the oven and cook for approximately 45 minutes on 375C
AND VOILA! There you have a beautifully stuffed pork tenderloin for the holidays!
