This is a perfect lighter desert! I was baking for a friends holiday party and decided to utilize some of the fresh fruit I had in my fridge. So, here it is!
Ingredients for Cupcakes (Approx. 16 cupcakes):
- 2 cups of all purpose flour
- 2 teaspoons baking soda
- 1 cup unsweetened cocoa
- 2 eggs
- 4 tbsp of butter
- 1 1/3 cups of sugar
- 1 cup of butter milk
- 1 tbsp vanilla
- 16 raspberries
- 2 banana
Ingredients for Icing:
- 1 cup of butter
- 1/2 cup of coco
- 2 tbsp of vanilla
- 4 cups of powdered sugar
- 2 tbsp of milk
Instructions:
1. Preheat oven to 350C
2. Combine all dry cupcake ingredients in a large mixing bowl
3. Mix well and then add the wet ingredients - 2 eggs, butter, buttermilk and vanilla into mixing bowl
4. Line cupcake pan with liners
5. Fill cupcake liners half way and add a slice of banana to each cupcake
6. Add batter to each cupcake until the banana slices are completely covered
7. Pop in the oven for 15-20 minutes
8. Allow cupcakes to cool before icing!
9. Add all ingredients for icing in a large mixing bowl
10. Mix well with electric mixer until icing has a smooth consistancy
11. Ice cupcakes and add a raspberry on top!
