I decided to start off the first day of Christmas Creations with a recipe that is very versatile and simple. It is a seasoned side that can be used for Christmas dinners, holiday dinner parties or just everyday life. The best part about this recipe is that it is super healthy! Not everyone needs to feel the guilt of indulging in holiday goodies (YET).
So instead of your regular mashed white potatoes - here is a recipe that will switch things up!
Ingredients (per 2 people):
- 1 large sweet potato
- 1 large white potato
- 1 large carrot stick
- 1 tbsp virgin olive oil
- 1 tsp black ground pepper
- 1 pinch of salt
- 1 dash of cayenne pepper (if you want a little spice in your LIFE!)
- 1 sheet of aluminum foil
Steps:
1. Preheat oven to 350C
2. Peel potatoes and carrots
3. Soak potatoes for a good 20 minutes
4. Dice potatoes into cubes and carrots width wise (small circles)
5. Place aluminum foil on baking pan and spread vegetables out
6. Drizzle and coat veggies in olive oil
