Many people go away during the holidays to nice warm places where the temperatures are anything but -40's. I was inspired to make something that would warm up my house and allow me to pretend I was on a tropical island somewhere! Oh, and did I also mention that these are HEALTHY!?? So, without further ado…. Banana Coconut Cookies!
Here is what you will need (makes 24 large cookies):
- 2 ripe or frozen (in my case) medium sized banana's
- 1 1/2 cup of brown sugar
- 2 cups of whole wheat flour
- 1/2 cup of margarine (or butter)
- 1 cup of oats
- 1/2 cup of shredded coconut
- 1 tbsp of coconut powder
- 2/3 cup of raisins
- 1/2 cup of crushed walnuts
- 1 tsp of vanilla
- 2 tbsp of cinnamon
- 1 tsp of ginger
- 2 tsp of baking powder

Instructions:
1. Preheat oven to 350C
2. Mix all dry ingredients in a large bowl (flour, brown sugar, oats, coconut, ginger, cinnamon, baking powder, walnuts and raisins). Stir well.

3. Add in softened butter and mashed bananas and mix until there are no dry ingredients in the bottom
4. Roll cookie dough into balls and place on a non stick baking pan sheet
5. Pop in the oven for 20 minutes until cookies are golden brown
and VOILA
