In honour of Chinese New Year I have brewed up a great chicken fried rice meal! This a very simple traditional Chinese dish that is super easy, delicious & a classic!
Here is what you will need (per 4 people):
- 1 cup of jasmine rice
- 2 cups of water
- 3 stalks of celery
- 2 carrot sticks
- 1/2 green pepper diced
- 1/2 red pepper diced
- 3 eggs (scrambled)
- 1 tbsp milk
- 1 cooked chicken breast (plain)
- 5 tbsp of soya sauce
- 1 tbsp sesame oil
Instructions:
1. Bring 2 cups of water to a boil and add in jasmine rice
2. Cover and remove from heat for 10-15 minutes (as per your package of rice)
3. Preheat frying pan to medium heat with sesame oil
4. Add diced vegetables; celery, carrots, green & red pepper
5. Fry until vegetables are soft

6. In separate frying pan, heat to low-medium - add 3 eggs and the milk
7. Continuously stir until eggs are completely scrambled (should be fluffy)
8. Add scrambled eggs and chicken to vegetable frying pan & stir well

8. Add scrambled eggs and chicken to vegetable frying pan & stir well
9. Season vegetables, eggs & chicken with soya sauce
10. Lastly, add in the cooked rice, mix well & VOILA!
