I placed this recipe in the "Good" section of the blog because this recipe incorporates all aspects of the food spectrum. WHICH I LOVE! It is a whole hearty meal that is nutritiously delicious!
Here is what you will need (per 4 people):
- 3 chicken breasts
- 4 cups cooked (1/4 package) of vermicelli rice noodles
- 1/2 cup green beans diced
- 3 celery stalks diced
- 1/2 cup mushrooms diced
- 1/2 cooking onion diced
- 1/2 red pepper diced
- 5 tbsp of teriyaki sauce
- 2 tbsp of soya sauce
- 2 large skillets
- 1 large pot
Instructions:
1. Preheat 2 skillets to medium heat
2. Preheat large pot with 1/3rd water to high heat
3. Prepare all vegetables by washing & dicing for cooking in a skillet
4. Place diced vegetables in a non-stick skillet

6. Continuously stir both vegetables and chicken until cooked (make sure to keep stirring utensils separate!)

7. Once chicken is cooked - add teriyaki sauce & sautee chicken for an additional 2 minutes
8. Season vegetables with soya sauce - add vegetables and chicken together

9. Place uncooked vermicelli rice noodles in boiling water
10. Cover pot & cook for 2 minutes
11. Drain & serve teriyaki chicken and vegetables over noodles!
