Happy Early Monday Morning! I hope everyone is gearing up for a fantastic week! It is JUNE !?!?! When did that even happen!? What happened to May?? Now that we are getting into the busy summer months I am trying to focus on some simple on-the-go snack and meal ideas that are easy and healthy! This morning I came up with this delicious choco-banana berry protein muffin! It turned out AMAZING! Take a look below! :)I
Here is what you will need (per 12):
- 2 1/2 scoops of chocolate protein powder
- 1 banana (I used a frozen one)
- 1/2 cup of chopped strawberries
- 1/4 cup of blueberries
- 1 1/2 cup of oats
- 1 cup of greek yogurt
- 2 eggs
- 1 teaspoon of coconut
- 1 tablespoon of cinnamon
- 2 tbsp of chocolate chips (if you wish)
- A muffin tray
- Muffin liners
- 1 large mixing bowl
Prep Time: 10 minutes
Cook Time: 30 minutes
Instructions:
1. Preheat oven to 350C
2. In a large mixing bowl, mix together your chocolate protein powder, oats, greek yogurt, 2 eggs, coconut and cinnamon
3. Heat up frozen banana (so it is warm and easy to mush) and mix it into the batter
4. Lastly, add in your strawberries, blueberries and chocolate chips

5. Add 2 large spoonfuls of mixture to each muffin liner (remember no flour so you can add the mixture to the rim)
6. Place in the oven for 30 minutes - until golden on top
