This past weekend I hosted our monthly girls get together night. We normally each bring an appetizer but since we were getting together later in the night I decided to come up with an appetizer that was not only healthy but can also be adapted to be a great meal/lunch idea! So without further ado…
SPICY WRAPS!
Here is what you will need: (per 3 wraps)
- 6 slices of summer sausage
- 6 slices of spicy genova sausage
- 1 cup of chopped spinach
- 1/2 red pepper diced
- 3 tbsp plain yogurt or light mayonnaise
- 1/2 cup shredded havarti cheese
- 1 garlic clove diced
- 1 tsp cumin
- 1 tbsp chili powder
- 1 tsp cayenne pepper
- A dash of red pepper flakes
- 3 whole wheat wraps (I used the mini Weight Watchers tortilla wraps)
Instructions:
1. Preheat oven to 350C
2. Lay wrap out on a flat surface
3. Using a knife evenly spread each wrap with 1 tbsp of yogurt or mayonnaise per wrap
4. Place 2 slices of summer sausage and genova sausage on each wrap

5. In a large bowl, mix together chopped spinach, garlic and diced red pepper
6. Season mixture with cumin, chill powder, cayenne pepper & red pepper flakes
7. Place mixture evenly in the middle of each wrap until mixture is all used

8. Sprinkle havarti cheese on top (or not if your dairy free!)
9. Roll each wrap up, making sure that each end is tucked into the folds/roll

10. Pop in the oven for 5 minutes

Perfectly seasoned & spicy wrap that is great for any birthday party, baby/bridal shower, appetizer or any lunch! I have also done this with chicken breast and it turned out amazing as well!
