Let me tell you that this is not your average stir fry! This stir fry leans away from the typical delicious Asian inspired stir fry's that you all know and love! The Zesty Chicken Stir Fry is southern inspired and can be prepared in 5 minutes and cooked over night or during the day!

Here is what you will need:
- 3 chicken breasts
- 1 orange or yellow bell pepper
- 1 small onion
- 1/4 cup Italian salad dressing
- 1/4 cup BBQ sauce
- Rice of your choice
- Slow cooker
Prep time: 5 minutes
Cook time: 4-5 hours on high or 7-8 hours on low

Instructions:
1. Place chicken in the bottom on the crock pot.
2. Place crock pot on high (for 3-4 hours cooking) or on low if you want to cook it for 7-8 hours.
3. Dice onion into small pieces and layer on top of chicken
4. Slice yellow/orange bell pepper length wise so that there are long, thin strips. Layer the peppers on top of the onions.
5. Drizzle the Italian salad dressing and BBQ sauce into the crock pot.
6. Place lid on the crock pot and let it cook.
7. If you can - give the dinner a stir every few hours (if not do not worry about it)
8. Cook the rice of your choice 30 minutes before eating time.
9. Remove dinner from the crock pot and enjoy! This makes about 3-4 servings!
