By popular demand, the Jalapeño Poppers are back! These a great Super Bowl Appetizer that can be completely healthy & paleo friendly if you minus the cheese! Without further ado lets get to the good stuff!
Here is what you will need (per 8 halves):
- 4 large jalapeños
- 1/4 red pepper diced
- 1/4 onion diced
- 1/4 stick of pepperoni
- 8 slices of marble & cheddar cheese (or NOT if your going the healthy way)
- 4 slices of bacon
- 8 tooth picks
Instructions:
1. Preheat oven to 400C
2. Slice jalapeños length wise & deseed (Tip: if you would like your jalapeños to be spicy leave the veins (the white parts) in!)
3. Dice onion and red pepper into small pieces

4. Bring frying pan or skillet to medium heat
5. Sautee red peppers & onions in olive oil until almost completely cooked (should slightly hard still)

6. Add diced pepperoni to skillet for 1 minute
7. Remove from heat
8. Stuff jalapeños with onion, red pepper & pepperoni first

9. Add the cheese layer on top
10. Wrap in bacon & secure with a tooth pick
11. Pop in the oven for 9 minutes and broil for the last minute for a total of 10 minutes in the oven!
