With the Super Bowl right around the corner this is the perfect appetizer recipe for entertaining guests for the big game! Not only does it have the perfect combination of spicy and sweet it is extremely healthy and packed with protein!
Here is what you will need (per 4 halves):
- 2 sweet potatoes
- 1/2 diced green pepper
- 1-2 jalapeños (depending on how spicy you would like to make it)
- 1/2 cup corn
- 1/2 can of black beans
- 1 tbsp of chill powder
- 1 tsp of cumin
- 1 tbsp of red pepper flakes
- 2 tbsp of shredded cheddar cheese (for all you non-paleo folks)
Instructions:
1. Preheat oven to 450C
2. Soak & scrub sweet potatoes so that there is no longer dirt on the skins
3. Place sweet potatoes on aluminum foil on a baking sheet
4. Poke multiple holes in them with a fork (for breathability)

9. After peppers look partially cooked - add in corn and black beans
10. Continuously stir for 5 minutes until stuffing is hot & cooked
11. Season stuffing with chill powder, cumins & red pepper flakes

12. Take sweet potatoes out of oven and cut them length wise
13. Scoop out 2/3rd's of the sweet potato (leaving a thick enough layer at the bottom - be careful not to ruin the skins!)
14. Add in your stuffing
15. Place cheddar cheese on top (tried to make mine look like a football)

16. Pop in the microwave for 30 seconds on high to melt the cheese
